Codex Alimentarius
Embracing and applying a risk-based approach to food safety can be challenging, particularly when countries have limited resources and /or capacities. In their efforts to support the uptake of risk-based food safety management FAO and WHO are working to develop accessible and user-friendly tools for the wider food safety community. Development of these tools has been driven by the international standard setting work of the Codex Alimentarius which takes a risk-based approach to its standard development work and in its standards guides countries to also embrace risk based approaches.
Risk assessment of Cronobacter spp. in powdered infant formula
  • Assess the impact of different-end product sampling regimes on risk reduction and product rejection
  • Assess the impact of control measures taken during reconstitution of powdered infant formula on risk reduction
  • Use in conjunction with the Codex Code of Hygienic Practice for Powdered Formulae for Infants and Young Children (available at https://www.fao.org/fao-who-codexalimentarius/codex-texts/codes-of-practice/en/).
  • Use in conjunction with the FAO/WHO Guidelines on the Safe Preparation storage and handling of powdered infant formula
Risk management tool for the control of Campylobacter and Salmonella spp. in chicken meat
  • Define your production-to-consumption flow path for chicken meat and investigate the impact of different steps and measures on one or both pathogens
  • Compute the residual risk between a baseline flowpath and one applying selected interventions.
  • Use in conjunction with the Codex Guidelines for the Control of Campylobacter and Salmonella in Chicken Meat (https://www.fao.org/input/download/standards/11780/CXG_078e.pdf.)

Microbiological sampling plan analysis tool
  • Assess the performance of range of sampling plans, irrespective of the pathogen or commodity they refer to.
  • Explore the impact of two- and three-class sampling plans (both presence/absence and concentration-based) in terms of the likelihood to detect and reject product not meeting the microbiological criterion
  • Estimate the risk reduction associated with this removal of unacceptable product from the exposure pathway.
Histamine sampling tool
  • Implement selected calculations related to the sampling for histamine and give two main options to the user:
    • Design a Plan - using the tool to explore options for number of samples and concentration thresholds given a histamine concentration limit
    • Analyze a Plan - using the tool to analyze a specific plan's performance
  • Use in conjunction with the report of the Joint FAO/WHO Expert Meeting on the Public Health Risks of Histamine and Other Biogenic Amines from Fish and Fishery Products (www.fao.org/food/food-safety-quality/a-z-index/histamine/en/)
Mycotoxin Sampling Tool
The Mycotoxin Sampling Tool provides support in analyzing performance of sampling plans, and determining the most appropriate plan to meet user’s defined objectives:
  • The user can evaluate the effect of varying sampling plan design parameters, such as sample size, on the performance of the sampling plan.
  • Using the performance information, the user can determine the most appropriate mycotoxin sampling plan to minimize risk of misclassifying lots considering available resources.
The Mycotoxin Sampling Tool also includes a user guide that provides step by step guidance on how to use the tool in 24 mycotoxin-commodity combinations.
